Afritada Chicken Recipe
1 kilogram chicken,cut into pieces
3 pieces potatoes,peeled and halved
1 green pepper,cut into strips
2 cups chicken broth or pork (stock)
1 red pepper,cut into strips
1 red onion,diced
2 tablespoons patis
1 head garlic,minced
1 cup tomato sauce
4 tablespoons cooking oil
Salt and pepper to taste
In a pot or wok, heat the oil.
Sauté onion and garlic.
Add chicken and slightly brown.
Pour the tomato sauce and stock. Bring to the boil and let boil for 20 minutes or until chicken is almost cooked.
Add potatoes and continue cooking for 10 minutes or until potatoes are cooked.
Add green and red peppers, simmer for a minute or two.
Add Salt and pepper to taste.
