Herb Healthy Salad Recipe
Ingredients:
3 c spinach
¼ C basil leaves
¼ c dill
2 scallions, thinly sliced
1 c arugula
¼ c flat leaf parsley
6 celery leaves
6 mint leaves
1 t olive oil
1-2 t lemon juice
Pinch of salt
Directions:
Wash the vegetables and herbs and dry well.
Cut or tear spinach, arugula, parsley, mint and basil leaves into pieces.
Mix everything but the oil and lemon juice.
Sprinkle olive oil and lemon juice over salad
Enjoy!
