Chicken Acapulco Recipe
Ingredients:
2 cup unsalted chicken broth
1 tablespoon olive oil
2 teaspoon ground cumin
2 tablespoons pickling spices
1/2 red pepper, sliced
1 pounds chicken breasts halves, boneless
1/2 yellow pepper, sliced
2 tablespoons minced seeded jalapeño chile
1 onion, halved, thinly sliced
1/3 cup rice wine vinegar
1/4 cup fresh cilantro leaves
3 large garlic cloves, minced

Directions:
Baked tortilla chips Boil broth and pickling spice in heavy large saucepan ten minutes.
Strain and return liquid to saucepan.
Add chicken, onion, vinegar, garlic, cumin and oil to skillet.
Simmer over very low heat until chicken is just cooked through, about ten minutes.
Transfer chicken and onions to shallow dish.
Top with chopped peppers and chile.
Cook until liquid boils down to 2 / 3 c, about ten minutes.
Pour liquid over chicken and let cool 30 minutes.
Add cilantro to chicken mixture.
Cover and refrigerate until well chilled, turning chicken occasionally, about 4 hours (can be prepared a day ahead).
Slice chicken and transfer to plates.

Lemon Breast Chicken Recipe

Lemon Breast Chicken Recipe
Ingredients:
4 chicken breasts
1 tablespoon chopped onion
1 clove garlic, minced
½ cup butter or margarine
½ cup flour
1/3 cup lemon juice
salt and pepper to taste

Directions:
Dust chicken lightly with flour. Melt the butter and then coat chicken with butter.
Put the remaining butter in baking dish. Cook for 30 minutes in an oven at 375 degrees.
During cooking, brush chicken with butter a few times.
While chicken is cooking, prepare the sauce.
Mix lemon juice, onion, garlic, salt and pepper.
Remove from oven and baste chicken with sauce.
Cook additional 30 minutes, basting with the sauce a couple of times during cooking.

Hot chicken Casserole recipe
Ingredients:
2 cups cooked chicken, cubed
2 cups chicken broth
8 oz cooked noodles
1 can mushrooms
1/2 teaspoon pepper
1/2 cup margarine
1/3 cup flour
1 cup milk
1/3 cup grated Parmesan cheese
2 tsp salt

Directions:
Melt margarine, add flour and stir until smooth.
Gradually add milk and broth, then seasonings and mushrooms.
Combine chicken, cooked noodles and prepared sauce.
Put in ungreased 8 inch x 12 inch x 2 inch baking pan and top with Parmesan cheese.
Bake at 350 degrees for 40 minutes until well browned.

Sexy Baked Salad chicken recipe
Ingredients:
2 cups chicken
1 cup shredded American cheese
2 tablespoons diced pimento
2 tablespoons lemon juice
1/2 cup slivered almonds
2 tablespoons green pepper
1 tablespoon grated onion
2 cups celery, sliced
10 ounce frozen peas
3/4 cup mayonnaise
Salt and pepper to taste

Directions:
Combine all ingredients.
A turn in 2 quarts casserole dish with butter.
Sprinkle with cheese and bake at 350 degrees for 20 minutes or until cheese is melted.
