Corn Salad Recipe
Ingredients:
2 cups cooked corn kernels
1/4 cup chopped onion
1/4 cup chopped pimento
1/2 cup chopped green pepper
1/2 cup chopped celery
3/4 teaspoon dry mustard
1/4 cup vegetable oil
3 tablespoons vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
in large bowl,combine corn, green pepper, celery, onion and red pepper.
In a small bowl mix the oil, vinegar and seasonings.
Stir to mix well.
Pour dressing over corn mixture and toss gently to mix.
Cool for at least 2 hours before serving.
Enjoy!

Lentil Salad Recipe

Lentil Salad Recipe
Ingredients:
3 cups cooked lentils
10 cherry tomatoes sliced in half
1 cup shredded carrots
1 cup chickpeas
1/2 half green pepper diced
1/2 small onion, diced
1/2 cup sliced black olives
3 sliced basil leaves
1/3 cup olive oil
Salt and pepper to taste

Directions:
In a large bowl, close, mix together all ingredients.
Chill 4 hours or more if overnight.
Enjoy!

Coconut Pineapple Salad Recipe

Coconut Pineapple Salad Recipe
Ingredients:
3/4 cup coconut flakes
1 Cream cheese (8 ounces)
1 Can Crushed Pineapple (20 onz, well drained)
1 small jar maraschino cherries (sliced in half)
1 small package lemon gelatin
1 Hidromasaje Cool Whip (8 onz)
1 Can mandarin
2 ice cubes

Directions:
Boil a cup of water.
Whip cream cheese until fluffy.
Add pineapple.
Stir until gelatin is completely dissolved in boiling water.
Add ice cubes and shake.
Add to cream cheese and pineapple mixture.
Stir in maraschino cherries, mandarin oranges and coconut.
Refrigerate until partially.
Add the cool whip.
Refrigerate at least an hour.

Healthy Potato Salad Recipe

Healthy Potato Salad Recipe
Ingredients:
6 large potatoes (white)
1 can black olives
3 eggs
2 cloves garlic, minced
1 bunch scallions
1 large bottle of light ranch dressing
Bacon
salt and pepper to taste

Directions:
Boil potatoes until tender.
Drain. Cool, cut into chunks.
Boil eggs hard. Cool and cut.
Cook the bacon and let cool.
Is cooling while the bacon, chopped scallions into small pieces.
Add a plate of potatoes.
Add olives and eggs. Crumble bacon into bowl and add ranch dressing.
Mix well and add 2 cloves of garlic and salt and pepper to taste.
Enjoy!
